  • Preparation and execution of sushi and sashimi dishes according to authentic Japanese techniques.
  • Quality control and assurance to meet 5-star luxury standards.
  • Daily mise en place and organization of the sushi section.
  • Collaboration in menu planning, seasonal adaptations, and special offers.
  • Training and guidance of new team members and apprentices.
  • Maintaining hygiene, HACCP standards, and food safety regulations at all times.


  • Requirements
    • Completed training as a sushi chef, ideally with an international background.
    • Minimum 3-5 years of experience in high-end Japanese or luxury hotel restaurants.
    • Mastery of sushi and sashimi preparation (maki, nigiri, sashimi, uramaki, special rolls).
    • Creativity in menu development (including fusion-inspired rolls as reflected in the menu: e.g., Hot Futo Maki, Koji Beef Roll, Peking Duck Roll).
    • Strong sense of quality, precision, and presentation.
    • Positive charisma, enthusiasm, and high motivation.
    • Excellent teamwork, communication skills, and guest-oriented service approach.
    Desirable
    • Experience in training junior chefs.
    • Knowledge of German or English at a communicative level.
    • Familiarity with European luxury hotel standards.
