Job Overview: We are seeking an experienced Senior Sushi Chef to join a thriving restaurant team. This role is integral to maintaining the restaurant's reputation for high-quality sushi while embracing its new Sushi & Tapas fusion concept. As a Senior Sushi Chef, you will lead a team of 3-4 Sushimen and ensure the highest standards are met in both flavor and presentation, particularly as sushi preparation takes place in front of guests in an open-kitchen format. You will also play a crucial role in the management of kitchen operations, staff training, and supplier coordination. Key Responsibilities: Supervise and lead the sushi team in preparing high-volume sushi while maintaining top-notch quality, especially during large events (corporate, private) and the restaurant's busy take-away service. Craft and refine a creative fusion menu blending traditional sushi with modern tapas influences. Demonstrate expert fish filleting skills and knowledge of various fish types, ensuring only the freshest, highest-quality ingredients are used. Take charge of supplier relations, ensuring timely delivery of premium fish and ingredients. Train and mentor a team of 3-4 Sushimen, ensuring they develop their skills, although training will occur away from the guest areas. Execute precise mise en place, optimizing prep work for smooth operations during service hours. Prepare sushi in front of guests, maintaining a professional, engaging demeanor while working in an open-plan kitchen. Ensure food safety, hygiene, and cleanliness standards are strictly adhered to at all times. Work closely with other kitchen staff and management, fostering teamwork and cooperation to deliver outstanding culinary experiences. Requirements 5-7 years of experience in sushi preparation, with a proven track record in high-volume, high-quality restaurant operations. Strong expertise in Japanese cuisine, particularly in sushi and Japanese fusion dishes. Excellent fish filleting skills and a deep understanding of various fish types and ingredients. Experience managing and training kitchen staff, with strong leadership abilities. Confident working in an open kitchen, with the ability to interact positively with guests while preparing sushi. Fluent in English (German proficiency is a plus). Ability to manage time and resources effectively in a fast-paced, event-driven environment. Organized with exceptional mise en place and prep skills. A team player with a pleasant personality, an open mind, and a passion for delivering high-quality food. Experience working in a Japanese fusion restaurant is highly desired.
